They are derived from the german “pfannkuchen”. The batter is almost identical, but the method of preparation is different. Funny how changing only a few steps in the recipe can change the outcome so drastically. You can fill the pancake with anything you desire. Be it yogurt, fruits, pudding or just powdered sugar. So, whether it is a dessert or a breakfast dish, this is the recipe for you.

Recipe

Ingredients

  • 45g Butter
  • 60g Flour
  • 3 Tbsp Sugar
  • 1/2 tsp Salt
  • 125ml Milk
  • 2 large Eggs

Fillings (optional)

  • Yogurt
  • Berries
  • Fruit
  • Powdered Sugar
  • Jam

Instructions

  1. Preheat the oven to 190ºC.
  2. Melt the butter and place 30ml in a large frying pan.
  3. Let the rest of the butter cool for 10 minutes.
  4. Fill all the ingredients in a food processor and blend well.
  5. Pour the batter into the frying pan.
  6. Bake for 30-35 minutes or until the edges are puffed.
  7. Choose the filling you like best and enjoy!

This dish is popular in many European countries. Czech palačinke, Hungarian palacsinta, Romanian placinta. They don’t only share similar names, they are also a similar dish. They are made up of a thin pancake, rolled up and filled with jam.

Recipe

Ingredients

  • 250g Flour
  • 2 Eggs
  • 1/2l Milk
  • 1 pinch Salt
  • Oil for the pan

Filling/ Topping

  • Jam (filling) (notes)
  • Powdered Sugar (dusting)

Instructions

  1. Pour all the ingredients in a large mixing bowl.
  2. Mix well with an electric mixer until there are no clumps left in the batter.
  3. Heat the oil in a pan.
  4. Pour two solid spoonfuls into the pan and cook on low heat.
  5. Wait until the top of the pancake is close to solid before flipping it.
  6. When it is finished, place it on a large plate.
  7. Spread jam on one side of the pancake.
  8. Roll the pancake up from the side with the jam on it.
  9. Stack the palatschinken and dust with powdered sugar.
  10. Serve and enjoy!

Notes

Jam: You can use any jam you like. If you are not a great fan of jam, you can also use other spreads.

In fact, they were used like bread. In french folklore, the origin is set in the 13th century. It is remembered as a happy accident. A housewife spilling porridge onto a cooking stone. Other sources claim that crepes first appeared in the year 472 when they were offered to pilgrims visiting Rome. No matter where they first appeared, one thing is certain, and that is that here they are. And they are probably here to stay. It is a loved breakfast or even dessert and it is quite simple to make.

Recipe

Ingredients

  • 125g Flour
  • 2 Eggs
  • 250ml Milk
  • 50g Butter
  • 5g Sugar
  • 1 pinch Salt
  • 1Tbsp Butter for the pan

Whipped Cream (alternatively, use store-bought whipped cream)

  • 250g Heavy Cream
  • 20g Powdered Sugar (more or less depending on preference)

Instructions

  1. Sift the flour, sugar and salt together into a small bowl.
  2. Melt the butter over medium heat, adding in the milk once the butter is melted.
  3. Crack the eggs into the milk mixture and use an electric mixer to mix the ingredients.
  4. Spoon the flour into the milk bit by bit mixing well to avoid clumps.
  5. Keep mixing until the batter is smooth.
  6. Melt the tablespoon of butter in a large pan.
  7. Pour two solid spoons full or one deep soup ladle full of batter onto the pan.
  8. Leave to cook through until the upper side is solid, before flipping the crepe.
  9. Put the crepe onto a plate while preparing the whipped cream.
  10. Beat the heavy cream on low speed until it is thick before adding in the powdered sugar gradually.
  11. The whipped cream should form stiff peaks when you take out the mixer.
  12. Fill the cream into a piping bag. You can use a star attachment to give the cream form.
  13. Fill the crepes with cream and sprinkle with a bit of powdered sugar.
  14. Et voilà!

Variations

Filling: Crepes, like other pancakes, can be enjoyed with an assortment of fillings and toppings. Some more usual than other. Common crepe topping are:

  • Lemon and sugar
  • Jam
  • Nutella
  • Fruit
  • Whipped cream

And, my personal favorite:

  • Dulce de Leche (Caramel sauce) and Cheese

Whatever you choose to put on them, crepes are delicious idea for every breakfast or brunch.

Pancakes in general reach as far back as the Stone Age. It has appeared often in literature and everyone can visualise a pancake. However, over time, each region or country went adapting the familiar recipe and presenting it in different ways. The following recipe is the German version of this very nutritious food. It is a very easy recipe and, who doesn’t enjoy a nice Pfannkuchen for breakfast?

Recipe

Ingredients

  • 300g Flour
  • 300ml Milk
  • 2 Egg
  • 6Tbsp Sugar
  • 2tsp Vanilla Extract
  • pinch Salt
  • 1 1/2 Tbsp Chocolate Chips

Instructions

  1. Mix the salt, sugar and flour.
  2. Whisk the eggs into the milk and add the vanilla extract.
  3. Use an electric mixer to mix the milk mixture into the flour.
  4. Mix well to make sure there are no clumps left.
  5. Integrate the chocolate chips into the batter.
  6. Melt a bit of butter in a small pan.
  7. Pour some of the batter into the centre of the pan and let it fill the pan.
  8. Cook on low heat until bubbles form on the top and it is mostly cooked through.
  9. Flip the pancake and cook for a few more minutes.
  10. Transfer onto a plate.
  11. And enjoy with whatever you like best!

Variations

Similar to American pancakes or Crepes, Pfannkuchen can be enjoyed with whatever you like best. From caramel sauce and whipped cream to nutella.

If you want to make savoury Pfannkuchen, you can leave out the chocolate chips or substitute them for bacon.

Did you know that pancakes date back 30.000 years? All the way to the Stone Age? They even been mentioned by Shakespeare. They are known all around the world although, the recipe tends to vary slightly. The American variant, pancakes is usually recognised as a small but fluffy breakfast treat that can be eaten with anything. From nutella and fruit to bacon and syrup. It is actually quite easy to make and, with the following recipe, you can make it yourself. Go ahead and give it a try.

Recipe

Ingredients

  • 150g Flour
  • 140ml Milk
  • 1tsp Baking Powder
  • 1/2tsp Salt
  • 2Tbsp Sugar (for a stronger taste, use brown sugar)
  • 1large Egg
  • 2Tbsp melted Butter

Instructions

  1. Sift the flour, baking powder, salt and sugar together into a large bowl.
  2. Lightly beat the egg in a seperate bowl.
  3. Mix the butter, egg and milk into the dry ingredients.
  4. Mix well with a whisk or electric mixer until no clumps are left.
  5. Pour a bit of sunflower oil into a pan or melt some butter.
  6. Use a big spoon to put some batter into the center of the pan. Pour it in the middle so it forms a circle.
  7. Let it bake until little bubbles start to appear on the top.
  8. Flip the pancake and bake for a few more minutes before tranfering onto a plate.
  9. Stack the pancakes and use your favorite topping.

Variations

If you prefer your pancakes to have a more neutral taste use white sugar. You can always add a bit of vanilla extract to boost the flavour.
