Oatmeal cookies can be traced back to England. The reach back all the way into the 1800s. It is speculated to have derived from oatcakes. Oatcakes used to be carried by soldiers to give them an energy boost. The first oatmeal raisin cookie recipe is believed to trace back to 1896 in Fannie Farmer’s Cookbook. This recipe is much healthier than the usual recipe. It has no butter or egg. It comes with a large vitamin boost and much energy. These biscuits are perfect to snack on on a hike.

Ingredients

  • 100g Coconut Butter
  • 200g Cane Sugar
  • 1 Banana
  • 1/2tsp Baking Powder
  • 1/2tsp Salt
  • 140g Oats

Instructions

  1. Beat the butter until smooth and incorporate the sugar.
  2. Use a fork to mash the banana and add it into the butter.
  3. Mix the salt and baking powder with the flour.
  4. Incorporate the flour into the butter.
  5. Leave the dough to cool for 30 minutes.
  6. Form the dough into cookies.
  7. Bake at 170ºC for 10-15 minutes.
  8. Remove the cookies form the oven and let them cool.
  9. Do not try to remove the cookies from the tray until cooled or they will crumble apart.
  10. Enjoy!
