Again, we find ourselves in our own Home. Rainbow cake is a colourful variant of the usual cake batter. It is usually made with six layers in the colours of the rainbow: red, orange, yellow, green, blue and purple. These just happen to be the colours of the pride flag so, what better way to celebrate Pride month?

Ingredients
Cake(six sponges)
- 375g butter
- 675g flour
- 450g white sugar
- 9eggs
- 3tsp baking powder
- pinch of salt
- 4tsp vanilla extract
- food colouring: red, yellow, blue and green
- different flavored jam or extract
Icing
- 750g cream cheese
- 350g icing sugar
- 4tsp vanilla extract
Instructions
- Use an electric mixer to mix the butter until it is soft and creamy.
- Add the sugar, vanilla extract, eggs and a pinch of salt and mix until the mixture is smooth.
- Mix the baking powder into the flour and spoon it into the butter mixture.
- Separate the batter into six bowls and mix in the food colouring until obtainign the right colour.
- Fill the batter into cake forms and bake for 10 minutes on 200ºC.
- Separate the cake from the form and leave to cool.
- Mix the cream cheese until soft. Mix in the vanilla extract and spoon in the icing sugar mixing well.
- Place the layers into a high cake form putting a bit of icing in between in sponges.
- Remove the cake from the form and cover with icing.
Variations
To make the layers more interesting, you can add different flavored jam or extracts in the different colours.
- red: strawberry/cherry
- orange: orange/peach
- yellow: lemon
- green: apple/mint
- blue: blueberry
- purple: blackberry/blackcurrant
You can also cover the cake in different coloured sprinkles.
