Caramelization is a fascinating chemical process that happens when sugars are heated to certain temperatures. Trying to take a more in depth approach to baking and elaborating desserts, I have decided to start with something I have struggled with in the past.
The Caramel Saga will cover my attempts at different forms of caramelized sugar creations from brittle to toffee and caramel sauce. The posts will include my process, things I learned and some scientific data collected through research and reading. Documenting my process has been very helpful when deciding on my next steps within this topic.
